2014 PROFESSIONAL DEVELOPMENT DAY

On October 6th, fifteen ProStart Educators attended the MRA Professional Development Day at Piantedosi Baking Company in Malden, MA. The day was full of activities and started with a presentation by Nick Calias and Dan Portelance. Nick Calias, Executive Chef at the Colonnade and Culinary Judge for the Massachusetts ProStart Invitational, joined us in the morning to talk about the ProStart Invitational from the judges’ perspective. He talked about the importance of keeping it simple, preparing dishes correctly and taking pairings into consideration. Dan Portelance, ProStart Educator at Carver High School, has coached the Massachusetts winning team at Nationals an impressive four times, two times for Culinary and four times for Management! Dan reviewed all the changes in the ProStart Invitational rule book and gave advice on how to win the competition.
The ProStart Invitational is an opportunity for students to exhibit their talent to Foodservice and Hospitality professionals and earn substantial scholarship awards.
The day continued with a hands-on activity. Lino DiSchino, Director of Research and Development for Piantedosi, talked to Educators about important steps in making a perfect dough and some key ingredients. Educators had a chance to form the dough and tour his laboratory. From there, we broke up into small groups and took a tour of the impressive, state-of-the-art factory.
We concluded the day with a networking lunch with MRA President & CEO, Bob Luz, Cathie Baines, EF Chair and ProStart Educator, and MRA members, Joe Piantedosi Jr., Owner of Piantedosi Baking Company, Joe Prestejohn, Owner of Cabot’s Ice Cream & Restaurant, Bob Wong, Owner of Kowloon, Domenic Savino, General Sales Manager of Piantedosi Baking Company and Mike Demersky, Project Development & Design Sales Manager of Boston Showcase Company.
Educators had a chance to talk about their needs and how to better communicate and connect with industry professionals.
We would like to extend a huge thank you to Joe Piantedosi Jr. for hosting our event. His generosity and incredible team made for a great day for our ProStart Educators.
